For over a decade, Somboon Jaising has preserved a traditional culinary craft in Bangkok's Bang Ramat area by preparing coconuts over smokeless charcoal. Situated close to the Khlong Lat Mayom Floating Market, her business has successfully complied with modern environmental regulations regarding air quality. This approach allows her to sustain the unique taste and regional knowledge associated with the practice. The survival of this traditional method is increasingly threatened as expanding urban areas gradually replace local agricultural orchards.
